For the third time, SÜFFA and its partners will be presenting a Glass Sausage Kitchen in the exhibition hall. Not only will exemplary processing possibilities for well-known products be shown at SÜFFA 2023, but a vegan product will also be produced for the first time. This will demonstrate the wide range of possible uses of machines in the sausage kitchen of any specialist business. Let the Transparent Sausage Kitchen inspire you and enrich both your range of products at the store counter and your catering appearance.

The Transparent Sausage Kitchen is located in Hall 7 right next to the stage (Booth 7A72). Three to four live productions with subsequent tasting take place there every day. A must on every tour of the trade fair!

Maschinenfabrik Seydelmann - partner of the Transparent Sausage Kitchen for the third time - is pleased to be able to demonstrate its machines in operation to this year's SÜFFA visitors.

With the automatic mincer AE 130 with cutting drumand the vacuum cutter K 64 AC-8, different products will be produced this year, which, as always, can be tasted afterwards.

The K 64 AC-8 high-performance cutter and the automatic mincer AE 130 with cutting drummpress with a robust and hygienic design, polished surfaces and the solid stainless machine stand.

The K 64 AC-8 with vacuum function achieves high cutting speeds, longer shelf life, higher protein breakdown, more flavor intensity and stronger binding. The AE 130 has a 2-speed working screw and a wide, conical feeder screw. It features a clear cutting pattern and a very high hourly output.

This year we, the VAN HEES GmbH, as a family-run company, are part of the Gläsernen Wurstküche for the first time. Together with the other partners, we are pleased to reinterpret the classic bratwurst as a snack and present vegan cevapcici as part of a production and tasting.

Both products will be served for tasting with our delicious VANTASIA® sauces. Taste for yourself directly on site, ask your questions to our technologist and take away new inspirations for your counter.

The Transparent Sausage Kitchen gives us the opportunity to present the production process of trendy products live and transparently. The step-by-step production of the products gives you an exclusive insight into how our filling and portioning systems work and how they can be optimally integrated into downstream or upstream systems in the overall process.

The VF 608 plus vacuum filler enables maximum product quality and weight accuracy when filling and portioning pasty foods. The simple synchronization with attachment machines, effectively support your operation when it comes to flexibility and adaptation to current market requirements. This guarantees high-quality and at the same time economical production of a versatile product range: from classic sausage and meat products to products for catering, lunch or special events.

Once again, FESSMANN is a partner of the "Gläsernen Wurstküche" and we are pleased to present our Nova cooking kettle. In the 300L Nova cooking kettle presented here, the products are scalded in a hot water bath and can then be tasted directly from the kettle.

The Nova cooking kettle from FESSMANN can be combined with all common heating modes. Made entirely of stainless steel and welded, the NOVA cooking kettle is a hygiene miracle. The newly developed NOVA.CON is an intuitive 7" touch control in the highest protection class and is prepared for both panel and wall mounting. Furthermore, the NOVA.CON can be integrated into the existing recording software of FESSMANN FOOD.LOG.

The handling of the cooking kettle is quite simple. Either you use a ladle to take the products out of the kettle, or the products are already provided with a cord in advance, by which you can take them out of the hot water again. Take a look at the Glass Sausage Kitchen to see how you can optimally transport the products into and out of the kettle. For large quantities, we recommend an insert basket that can be lifted on a lifting device with a ropeway.
